The homeland of dessert, which once a world-renowned eater can never give up, is actually our province of Gaziantep, where it is made with forty layers of tiny bread dough. Although it is claimed that the origin of the dessert is based on Assyrians, no real evidence has been found. However, it is very likely that it is of Central Asian Turkish origin. As a matter of fact, some sources say that the word baklava in old Turkish is mentioned as pod, and it is derived from Mongolian by adding the suffix -v to the byla verb, which means 'to bind' means 'wrap'. Perhaps this is why dessert is addictive to us. Baklava, which we encountered in different ways with its name in history, was also in the Ottoman period with all its figuring out. Baklava, prepared in the palace kitchens, was given as a gift to the incoming Janissaries by the sultan as the 'Baklava procession'. One baklava is prepared for each of the ten soldiers, and after lining up in front of the Palace kitchen, Silahtar Ağa will take the first series, and then two soldiers will take the other series in order. In the company, the superiors went out through the doors that opened with the baklava sins at the back and walked the streets of Istanbul towards the barracks.
